It simply doesn’t get easier than this. Made with real ingredients, an extra protein boost, and any additional add ins you’d like, these healthy protein cookies are a perfect snack any time of day and so easy to customize. I’m not kidding when I say that you can eat these everyday, because I do. Almost every week I’ll make a batch of these with my meal prep or whenever I have bananas that need to be used up. They’re easier than banana bread, but just as delicious, and I always buy extra bananas each week just for making these cookies.

Ingredients for the Healthy Protein Cookies

  • Oats
  • Bananas
  • Protein powder

Optional:

  • Cinnamon
  • Dark chocolate chips
  • Nuts / seeds
  • Dried fruit

Substitutions

If you don’t have bananas or you’d like to try something new, a great swap would be to use unsweetened apple sauce in replace of the bananas (or you could do half and half).

To play around with different flavours, you could try out different protein powders, though I find vanilla to be the most versatile and subtile flavour.

For add ins, you can get as creative as you’d like. My favourite combination is peanuts, pumpkin seeds and dark chocolate chips, though I also love trying new flavours as well. Other combinations that I love are coconut and dried cranberry, date with cashew and hemp seeds, cinnamon raisin, or dried blueberry chia seeds and slivered almonds.

Healthy Protein Cookies

Ingredients

  • 2 large ripe bananas ~1 cup mashed
  • 1 cup oats large flake
  • 1/3 cup vanilla protein powder

Optional

  • 1/2 tsp cinnamon
  • 1/8 cup dark chocolate chips
  • 1/8 cup peanuts
  • 1/8 cup pumkin seeds
  • or any other add ins you'd like

Instructions

  • Preheat oven to 320 ℉.
  • In a medium bowl, mash the bananas.
  • Add oats, protein powder and any mix ins you'd like. Mix to combine.
  • Scoop batter onto a baking tray, forming ~12 cookies, press the tops down to form a puck shape. These cookies won't rise, so the size you make them is the size they will be.
  • Bake for 12 minutes, remove from the oven and flip cookies, then bake an additional 8 minutes.
