  • Dried chickpeas
  • Baking soda
  • Tahini
  • Lemon juice
  • Garlic
  • Cumin
  • Salt

What’s the Secret to Creamy Hummus?

To achieve that perfect soft and smooth texture in your hummus, it all starts with the chickpeas. It is very important here to use dried chickpeas. Simply measure out your chickpeas and place them in a bowl, sprinkle with a tad of baking soda, and cover with room temperature water. The chickpeas will approximately double in size during the soak, so make sure to add enough water to account for this. Next, you simply leave the chickpeas to sit for 6+ hours, or overnight. Either start this soak in the morning if you plan to make hummus that night, or start it in the evening to make it the next day.

Once your chickpeas have completed their soak, strain off the water and add to a medium pot. Again, add a dash of baking soda and cover with water (the chickpeas will expand again in this step). Bring your pot of chickpeas to a boil, reduce to a simmer and let cook for 1 hour. Make sure to check the water level about halfway through to ensure there is enough water for them to cook all the way.

Adding baking soda to the steps mentioned above will help to soften the chickpeas, making them almost mushy and easier to blend into that wonderful creamy consistency. Once your chickpeas are cooked and cooled, continue to the blender to finish it off, and enjoy the smoothest hummus you’ve ever made.

Super Creamy Oil-Free Hummus

Servings 3 cups

Equipment

  • Food processor or high powered blender

Ingredients

  • 1 cup dried chickpeas
  • 1/2 tsp baking soda
  • 1/4 cup tahini
  • 3 tbsp lemon juice
  • 2 cloves garlic
  • 1/2 tsp cumin
  • 1/4 tsp salt

Instructions

  • Put the dry chickpeas in a medium bowl with 1/4 tsp baking soda and fill with water to soak. Leave to soak for 6+ hours or overnight.
  • Drain the chickpeas and place in a medium pot with another 1/4 tsp baking soda. Fill with water. Bring to a boil, then reduce to simmer. Let simmer for 1 hour until the chickpeas become soft but not mushy.
  • Once done, strain your chickpeas and let sit to cool off completely.
  • Once cooled, add the chickpeas to a food processor, along with the tahini, lemon juice, garlic, cumin and salt, blend until smooth.
  • If the consistency is too thick, add a dash of cold water, only a little at a time until a desired consistency has been met.
  • Store in a sealed container in the fridge for up to 1 week.
