High Protein Pulled Jackfruit Tacos

These aren’t just any tacos, these high protein pulled jackfruit tacos are packed with plant protein, many wonderful fresh flavours, and a plethora of vital nutrients to awake your taste buds and fuel your body.

Whether you’re a fan of pulled pork, or the plant based version of pulled jackfruit, then these tacos are for you! My take on the jackfruit taco contains everything you love about the classic version, but with many added benefits.

What Makes These High Protein Pulled Jackfruit Tacos So Good?

Firstly lets talk about jackfruit. Jackfruit is a wonderful fruit that can be so versatile in how it’s prepared and can actually resemble the texture of pulled pork. Flavour it just right and you’ll have an amazing plant-based swap for this well-loved favourite. Jackfruit has many health benefits, being high in both vitamin A and C, among others. One thing about jackfruit to note, is that if you’re using it as a meat alternative, it doesn’t actually contain very much protein. An easy fix to this issue, would be to combine a source of protein with your jackfruit so that you can maintain the lovely texture and flavour holding profiles, while meeting your protein goals.

The next factor in creating a bomber high protein pulled jackfruit taco, is the seasoning and sauce that is used. Jackfruit is a wonderful carrier of flavour and it can truly be the highlight to many dishes if seasoned properly. In this recipe, we’ll be using a combination of simple spices, along with bbq sauce to create the juicy and flavourful taco “meat”. You can use my bbq sauce recipe below or use your favourite one of your choice.

Lastly, I love to make my own mango pico and guacamole for a pop of freshness and sweet flavours. This really is the cherry on top. If you’re not a fan of mango, simply swap it out for pineapple or even leave it out, but I do recommend taking the extra moments to make your own fresh salsa, it will make all the difference!

How to Make Your Jackfruit Tacos High Protein

For our source of protein, we’ll simply be adding TVP (textured vegetable protein) to the jackfruit. This is a great way to boost the protein content and add extra texture to your jackfruit. TVP is essentially defattened soy flour that’s created as a byproduct through making soybean oil. The result is a dehydrated product that is extremely high in protein, and once rehydrated, can resemble something almost like ground beef. It can be seasoned any way you wish and takes on flavour very well. To make these high protein pulled jackfruit tacos, we’ll combine TVP with the jackfruit, and you almost won’t even be able to tell it’s there as the TVP will taste just like the flavourings you add.

Ingredients for the High Protein Pulled Jackfruit Tacos

Pulled Jackfruit:

  • 1 can young green jackfruit in water or brine (NOT the sweetened type in syrup)
  • TVP (textured vegetable protein)
  • Onion
  • Garlic
  • Cumin
  • Chilli powder
  • Smoked paprika
  • Salt

BBQ sauce:

  • Tomato paste
  • Maple syrup
  • Apple cider vinegar
  • Soy sauce
  • Liquid smoke
  • Garlic
  • Chilli powder
  • Smoked paprika

Mango Pico:

  • Tomatos
  • Mango
  • Red onion
  • Lemon Juice
  • Salt and pepper
  • Optional: Cilantro

Guacamole:

  • Avocado
  • Tomato
  • Red onion
  • Lemon juice
  • Salt

Other:

  • Taco shells
  • Kale or other leafy green

High Protein Pulled Jackfruit Tacos

Ingredients

Pulled Jackfruit

  • can young green jackfruit in water or brine NOT the sweetened type in syrup
  • 1/2 medium onion
  • 2 cloves garlic
  • 1/2 cup TVP
  • 1 cup water
  • 1 tsp cumin
  • 1/2 tsp chilli powder
  • 1/4 tsp paprika
  • pinch salt

BBQ sauce

  • 3 tbsp tomato paste
  • 1 tbsp maple syrup
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp soy sauce
  • 1/8 tsp liquid smoke
  • 1/4 tsp garlic powder
  • 1/2 tsp chilli powder
  • 1/4 tsp smoked paprika

Mango Pico

  • 1 medium tomato diced
  • 2 tbsp red onion diced
  • 1/4 cup mango diced
  • 1 tsp lemon juice
  • pinch salt
  • pinch pepper
  • 2 tbsp cilantro optional

Guacamole

  • 1/2 medium avocado
  • 1 tbsp tomato finely diced
  • 1 tbsp red onion finely diced
  • 1 tsp lemon juice
  • dash salt

Other

  • corn tortilla shells
  • 1 large handful kale Or another leafy green

Instructions

  • Open your can of jackfruit and rip pieces apart to resemble pulled pork. You can do this with a couple forks, though I find it works best with your hands.
  • Chop onion and garlic and add to a frying pan on medium heat with a splash of water to avoid sticking. Once onions become translucent, add jackfruit, TVP, 1/2 cup water and spices. Reduce temperature to medium-low and add a lid to cook. Mix frequently and add a touch more water if needed.
  • While the jackfruit is cooking, make the bbq sauce, pico and guacamole.
  • Make bbq sauce – add all ingredients into a bowl and mix well.
  • Add bbq sauce to jackfruit and mix. Continue cooking on med-low heat, stirring every few minutes.
  • Make pico – Roughly dice tomato, mango, red onion and cilantro if using, add to a small bowl. Mix in lemon juice, salt and pepper.
  • Make guacamole – Smash avocado in a small bowl. Finely chop tomato and red onion, add to avocado. Mix in lemon juice and salt.
  • Jackfruit is done when the texture is soft (~15-20 minutes total cook time). Remove from heat and assemble tacos.
