Simple Smokey Seitan Sausages

These high protein simple smokey seitan sausages require only 15 minutes hands on time, being one of the easiest ways to make seitan! With their highly palatable flavour profile of smokey, sweet and savoury, these sausages will complement any dish.

Due to their high protein content and versatility in meals, I always loved picking up the newest flavour of vegan sausages at my local grocery store. What I didn’t love about these vegan sausages though, was the high price tag and unnecessary amount of added ingredients such as fats, sugars and preservatives that came with them. So, on my search to find an easy and healthy alternative, I came up with these super simple smokey seitan sausages, made with real ingredients to fill your belly and fuel your day.

What is Seitan?

Seitan is a high protein plant-based meat substitute that is made out of vital wheat gluten and water (along with anything else you want to add for flavour). Not surprisingly, it has become a very popular meat replacement in creating many dishes to be vegan as it can take on any flavour added to it. Also, if prepared a certain way, seitan has a similar texture to that of meat.

So what is vital wheat gluten? I’m happy you asked. To put it simple, vital wheat gluten is essentially concentrated protein that has been removed from flour (or the gluten of flour). If you take regular wheat flour, you can actually extract this part yourself through a process of kneading your dough in water to release the gluten component. What you’d be left with is a product that is very high in protein and actually low in carbohydrates. In just 100g, vital wheat gluten has 75g protein, 14g carbohydrates, <2g fat and just 370 calories, being a protein powerhouse, especially for vegans!

How to Prepare Your Simple Smokey Seitan Sausages

The simplicity and versatility of these simple smokey seitan sausages is one of their many greatnesses. These sausages have a wonderful flavour that can compliment almost any meal, and be enjoyed at breakfast, lunch, dinner, or even as a snack! I love to prep a large batch of these and throw them in my freezer for a quick source of protein to bulk up any meal.

Some of my favourite ways to enjoy these simple smokey seitan sausages is:

  • In a hot dog bun with your favourite toppings
  • Slice them up and serve with crackers, hummus and veggies
  • Chop them up and fry with Creamy Mushroom Gnocchi or pirogies
  • Place on a homemade pizza
  • Throw in your stuffing to make the perfect thanksgiving or Christmas feast
  • Any many more… the options are endless!

Ingredients for the Simple Smokey Seitan Sausages

  • Vital wheat gluten
  • nutritional yeast
  • Salt
  • Garlic powder
  • Chilli powder
  • Smoked paprika
  • Rosemary
  • Sage
  • Maple syrup
  • Soy sauce
  • Liquid smoke
  • Tomato paste OR ketchup
  • Vegetable broth OR bouillon

Tips For Success

  • When mixing your dough together, it should be moist enough that all the dry ingredients are well incorporated. If your dough seems too dry, simply add a splash of water until it comes together.
  • Kneading your dough for 5 minutes will ensure everything is well mixed together for an even flavour and texture.
  • When wrapping your sausages in tin foil, simply roll them out into a log shape first, then LOOSELY wrap them up, leaving space as the sausages will expand when cooked. You want them tight enough that they have a shape to form too, and well covered so they won’t be exposed to the steam directly, but loose enough so they won’t burst.
  • If freezing: wait until your sausages are completely cooled after steaming and you can simply stick them in the freezer as is (in their original tin foil wrap).

Storage

I love to make a batch of these simple seitan sausages to freeze for later enjoyment. Once they’re cooled off from steaming, simply place the sausages in the freezer with the same foil they were steamed in, and they last very well. When reheating, simply remove the foil and place in the microwave for 60 seconds. You now have a super quick and delicious source of protein that you can add to any meal.

You can also store them in the fridge if you plan on eating them within the week!

Simple Smokey Seitan Sausages

Equipment

  • double boiler or steamer

Ingredients

  • 2 cups vital wheat gluten
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt
  • 1 tbsp garlic powder
  • 2 tsp chilli powder
  • 1 tsp smoked paprika
  • 1 tbsp rosemary
  • 1 tsp sage
  • 1 tbsp maple syrup
  • 2 tbsp soy sauce
  • 1/2 tsp liquid smoke
  • 2 tbsp tomato paste or ketchup
  • 1 1/2 cup vegetable broth

Instructions

  • In a large bowl, combine all dry ingredients, mix.
  • In a medium bowl, combine wet ingredients, mix.
  • Add wet ingredients to the dry ingredients and mix well. Knead with your hands as it comes together.
  • Put a large pot of water on to boil for your double boiler.
  • Divide the dough into 8 equal parts, shaping into sausages. Wrap in tin foil, but not too tight because the sausages will expand when they are cooking. Secure the ends of the tin foil well (I like to twist them to secure).
  • Place your sausages in your double boiler and steam for 45 minutes, keeping the water at a simmer. Check the water level after 25 minutes to make sure it hasn't evaporated (you may need to add more).
  • Once the sausages are done steaming, either enjoy right away or let cool off completely before storage.
