Because what’s breakfast without eggs? This easy tofu scramble recipe is a staple in our home, making a perfect contribution to a nice hearty brunch. I love it’s versatility, and ability to go great with any breakfast dish, such as my favourite tempeh bacon, breakfast burritos and oil-free hash browns.
Tofu is such a great product with it’s endless possibilities, but one thing I believe it can easily mock the best is simply scrambled eggs, making a great substitute. Tofu not only comes from the highest protein legume, but it can be crumbled up into little chunks that truly resemble the texture of scrambled eggs. Take those important features and combine it with the right blend of herbs and spices, and you’ll have a perfect swap of your favourite breakfast food, bringing you a lovely savoury flavour that warms the belly and will make you feel full and fuelled for the day ahead!

When replicating scrambled eggs, you can’t miss the creamy, cheesy textures and flavours associated with this favourite breakfast powerhouse. The nutritional yeast and plant milk are crucial to making a hearty vegan scrambled egg. Firstly, a dash of milk really makes the spices sink into the tofu without drying out the dish. Secondly, The nutritional yeast brings a cheesy flavour that helps thicken the dish, while maintaining a creamy texture. Also, nutritional yeast is packed with great sources of protein and nutrients. We love adding flavour AND nutrition in the same stroke!
Using extra firm tofu is my personal favourite as well – I find it crumbles the best and keeps good form and a nice thick texture. Lastly, Turmeric, an essential spice that adds a beautiful yellow colour to the tofu making it stand out and resemble our goal of a cheesy scramble. Turmeric also comes with many great health benefits, being a popular anti-inflammatory and helps with the recovery of injuries or sore muscles, being an easy choice to add to any dish whenever I can.

- Onion
- Garlic

Easy Tofu Scramble
Ingredients
- 1 block extra firm tofu
- 1/2 onion
- 2 cloves garlic
- 1/4 tsp salt
- 1 tbsp nutritional yeast
- 1/4 tsp turmeric
- pinch black pepper
- 1/4 tsp chilli powder (optional)
- 2 tbsp unsweetened plant milk
Instructions
- Dice onion and garlic, pan fry over medium heat until translucent.
- Crumble tofu into pan and sprinkle all of the spices on top, slowly add almond milk and mix well. Pan fry about 5 minutes until tofu is cooked.
