Preheat oven to 350 ℉.
In a large bowl mix together milk and apple cider vinegar, set aside.
In a separate bowl, combine both flours, baking powder, baking soda, and salt. Mix and set aside.
To the milk mixture, add maple syrup, applesauce, vanilla. Mix.
Add the dry ingredients to the wet and mix until just combined. Fold in blueberries. *Be careful not to over mix or your muffins will turn out dense*
Scoop your batter into a 12 holder muffin tin, trying to make them as even as possible.
Bake for ~30 minutes or until a toothpick comes out clean.
