Healthy Low Fat Blueberry Muffins

Ingredients

  • 1 cup milk of choice (I used almond, but any type would be fine)
  • 1 tsp apple cider vinegar
  • 1 cup whole wheat flour
  • 1 cup white flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup maple syrup
  • 1/3 cup apple sauce
  • 1 tsp vanilla extract
  • 1 cup blueberries

Instructions

  • Preheat oven to 350 ℉.
  • In a large bowl mix together milk and apple cider vinegar, set aside.
  • In a separate bowl, combine both flours, baking powder, baking soda, and salt. Mix and set aside.
  • To the milk mixture, add maple syrup, applesauce, vanilla. Mix.
  • Add the dry ingredients to the wet and mix until just combined. Fold in blueberries. *Be careful not to over mix or your muffins will turn out dense*
  • Scoop your batter into a 12 holder muffin tin, trying to make them as even as possible.
  • Bake for ~30 minutes or until a toothpick comes out clean.
