This almond apricot granola has the perfect balance of fresh and nutty flavours, packed with many super ingredients to fuel your day.

- Oats
- Sliced almonds
- Sunflower seeds
- Pumpkin seeds
- Dried apricots
- Coconut oil
- Maple syrup
- Cinnamon
- Salt

Almond Apricot Granola
Servings 5
Ingredients
- 4 cups oats (large flake)
- 1/4 cup sliced almonds
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/2 cup dried apricots (chopped)
- 2 tsp ground cinnamon
- 1/8 tsp salt
- 1/4 cup coconut oil (melted)
- 1/4 cup maple syrup
Instructions
- Preheat oven to 350 ℉.
- In a large bowl combine the dry ingredients, except the apricots, and mix well. (apricots will be added after done baking)
- Melt coconut oil, then add to the dry ingredients along with maple syrup. Mix well until mixture is evenly coated.
- Lay mixture on baking sheet in an even layer, pressing firmly to pack down.
- Bake for 12 minutes.
- Remove from oven, stir and press down again, then place back in the oven.
- Bake an additional 8 minutes.
- Granola is done when the edges are slightly browned. Let cool completely before removing from tray.
- Mix in chopped apricots and enjoy.
- Store in an air tight jar for up to 4 months.
