Almond Apricot Granola

This almond apricot granola has the perfect balance of fresh and nutty flavours, packed with many super ingredients to fuel your day.

  • Sliced almonds
  • Sunflower seeds
  • Pumpkin seeds
  • Dried apricots
  • Coconut oil
  • Maple syrup
  • Cinnamon
  • Salt

Almond Apricot Granola

Ingredients

  • 4 cups oats (large flake)
  • 1/4 cup sliced almonds
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/2 cup dried apricots (chopped)
  • 2 tsp ground cinnamon
  • 1/8 tsp salt
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup

Instructions

  • Preheat oven to 350 ℉.
  • In a large bowl combine the dry ingredients, except the apricots, and mix well. (apricots will be added after done baking)
  • Melt coconut oil, then add to the dry ingredients along with maple syrup. Mix well until mixture is evenly coated.
  • Lay mixture on baking sheet in an even layer, pressing firmly to pack down.
  • Bake for 12 minutes.
  • Remove from oven, stir and press down again, then place back in the oven.
  • Bake an additional 8 minutes.
  • Granola is done when the edges are slightly browned. Let cool completely before removing from tray.
  • Mix in chopped apricots and enjoy.
  • Store in an air tight jar for up to 4 months.
