I love a good muffin any time of day, whether it be for breakfast, a mid day snack or even desert. What shies me away from indulging in such treats everyday though, is their common features of being high in fat and sugar, along with a dense amount of calories. But fear not, these healthy low fat blueberry muffins are everything you could want in a muffin – without all that junk!
Why Make Your Muffins Healthier?
Whenever I go to a new coffee shop, I always peer through that shiny glass casing they have around the baked goods and contemplate whether or not I should splurge in one of these lovely looking treats. Every now and then, i’ll choose to treat myself and indulge. Sometimes I feel guilty about it, and sometimes I don’t, but I do wonder what it would be like if I could eat such goodies without that shame in the back of my mind, knowing there could’ve been a better choice.
Many common treats from bakeries and shops, including the muffins, will have upwards of 500 calories for just one unit. That’s about a meals worth of caloric intake in just a mere snack. This would be okay if it were to fill you up and provide you with at least some nutrients, but unfortunately this is not the story with most baked goods.
Most muffins, even the bran or whole wheat versions claiming to be healthy, will have a high amount of added fat and sugar, at minimum. Sometimes, they’ll even contain a long list of ingredients you can’t pronounce. What does this do to your body? It spikes your bodies insulin and dopamine levels, leading to a temporary feeling of satisfaction that will soon crash, leaving you with less pleasure and energy than before you ate it. And, You’re unlikely to get any health benefits from such a delicacy, so unfortunately the only good thing you’ll receive is a few moments of highly palatable flavour sensations in your mouth while enjoying this treat.
How to Make Your Muffins Healthier
Whenever possible, I prefer to make my own treats. Even if I choose to add a fat and sugar component, I can control the quantities included to make them more compatible with my health goals.
Within this easy low-fat blueberry muffin recipe, I’ll explain you how you can swap out common ingredients to healthier alternatives. Firstly, and possibly the biggest one is that I swap butter or oil for applesauce. Yes you read it correct, applesauce. Applesauce is perfect to replace the fat in many recipes as it adds a moist, creamy smooth texture without the added calories. Applesauce also gives your muffins a natural sweetness with added fibre and nutrients – double win!
Along with the applesauce, I like to replace the sugar content for a smaller amount of maple syrup. Maple syrup is a great alternative to regular cane sugar as it’s far less processed and you can get away with adding a reduced amount while still enjoying the sweet flavour it provides.
Another healthy hack is to use fresh (or frozen) fruit in your baked goods. Fruit is a great way to add sweetness being as natural as it gets, and commonly referred to as natures candy! Whenever you have a sweet tooth, it’s best to choose fruit first as it will satisfy you just as much (if not more) than processed sugars. Fruit will also provide you with many important nutrients that leave you to feeling great long after consuming this powerful snack.
Lastly, the secret weapon of adding apple cider vinegar to your plant milk will produce a buttermilk like product that makes these muffins so moist and fluffy. This again reduces the caloric content of using a fatty milk or oil based product.

- Whole wheat flour

The best part of these muffins is that you can enjoy them any time of day and they won’t give you an energy crash, actually quite the opposite. Healthy Low Fat Blueberry Muffins
Ingredients
- 1 cup milk of choice (I used almond, but any type would be fine)
- 1 tsp apple cider vinegar
- 1 cup whole wheat flour
- 1 cup white flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup maple syrup
- 1/3 cup apple sauce
- 1 tsp vanilla extract
- 1 cup blueberries
Instructions
- Preheat oven to 350 ℉.
- In a large bowl mix together milk and apple cider vinegar, set aside.
- In a separate bowl, combine both flours, baking powder, baking soda, and salt. Mix and set aside.
- To the milk mixture, add maple syrup, applesauce, vanilla. Mix.
- Add the dry ingredients to the wet and mix until just combined. Fold in blueberries. *Be careful not to over mix or your muffins will turn out dense*
- Scoop your batter into a 12 holder muffin tin, trying to make them as even as possible.
- Bake for ~30 minutes or until a toothpick comes out clean.
